Apple Tarts



This afternoon I made two delicious apple tarts. I used a tart crust recipe from this book. My favorite cook book! I used to never make tarts and always pies but since selling tarts with Piper a few years back at our farmers market I never went back. They are so easy and so yummy....





Tart Crust Recipe:
2 cups of organic whole wheat pastry flour
1 and 1/2 sticks of salted butter
mix is pastry blender ( Cusinart is what I use)
1/2 cup of cold water, add and mix until dough starts to stick together

Separate dough into 2 balls and press flat on floured surface
Refrigerator doughs for 1 hour

Apple Filling:
During this time I started the apple filling
I cut 5 large Lopez apples into small pieces
added, lemon, honey, cinnamon into bowl
mixed and let sit for 1 hour

Roll out the cold dough on a floured surface and place apples in the middle of it. Then fold up sides to create a bowl to hold in the apples.

Pre-heat oven to 375-400 degrees and they cook for 45 mins, or until golden brown and apples bubble

* I always add a few teaspoons of butter to the apple filling, to give it just a bit more goodness.

Once baked, let cool and whip some cream for a delicious dessert or afternoon treat!
